Strawberry Pear Banana Smoothies

Fab green smoothies are nutrient packed and easy to make. They’re a no brainer to include in my diet. Make a 2 serving smoothies and have it for breakfast and snack! The guilt-free strawberry pear banana smoothies recipe is filling too. Win Win!

Easy recipe: Serves 2
• 1 cup cold green tea (or water)
• 2 cups of organic green (I got a pack of mixed green, consisted of kale, chard and spinach from Trader Joe’s)
• 1 banana
• 1 pear
• 1 cup of strawberry
• 1 persian cucumber

Fab Banana Plum Mango Yogurt Smoothies

This green smoothie recipe of combining banana, plum, mango and yogurt with spinach is tasty, filling and healthy! They are easy to make and convenient for a grab and go snack. Or sit and enjoy with a spoon.


Easy recipe: Serves 2
 1 cup water
 3 oz lite plain or greek yogurt (featured here is Yoplait lite vanilla greek yogurt)
 1 lime, freshly squeezed (optional)
 2 cups organic spinach
 1 banana
 1 plum
 1/2 mango
 1/2 mango, diced

Preparation instructions
Blend all ingredients except the half diced mango. Pour smoothie into a cup and top with diced mango

Calories: about 170 per serving

Tomato, Turkey and Mushroom Fried Rice

I love fried rice, especially stir fried with sun dried tomato, turkey and mushroomIt’s my comfort food and have to have it at least once a month or more. Thank goodness for healthy brown rice, which is a great substitute for white rice!

Easy recipe: Serves 4
 1 cup uncooked brown rice, cook according to package directions (let it cool before using for stir fry) 
 1/2 onion, diced
 1/3 cup sun dried tomatoes
 8 oz ground turkey
 1 cup white button mushrooms, sliced (add more if you like mushrooms)
 6 cups organic spinach
 2 egg whites (or replaced with one egg), whisked
 2 tbsp soy sauce
 1 tsp sesame oil
 Olive or coconut oil spray
 Salt to taste
tip: overnight cooked rice tastes even better in stir fry 
 
Cooking directions
Spray cooking oil in a cooking pan over medium-high heat. Add onion and stir fry for about 1 minute
 Add mushrooms and stir fry for about 4 minutes (add a little water if mixture is too dry)
 Add ground turkey and stir fry until meat is cooked
 Add sun dried tomatoes, spinach, soy sauce, sesame oil, salt, brown rice and egg
 Stir fry everything together until eggs are cooked. By this time spinach will have wilted
 Remove and serve

Easy recipe: Serves 2
1 cup water
 3 oz low fat or fat free plain yogurt (optional greek yogurt or my favorite is lite Yoplait vanilla yogurt)
 1 lime, freshly squeezed
 2 cups organic spinach
 1 mango
 1 peach
 1/2 a cucumber

Blend and enjoy!

Egg Spinach Cheese Bagel Do you sometimes crave a bagel but feel like there are too many carbs or calories? This egg, spinach, cheese and sun-dried tomato on whole wheat thin bagel may be a bagel lover’s dream come true. Each bagel by Thomas brand is only 110 calories. But wait! Instead of using the full bagel, we are only using half a bagel which further reduces the calories. Now, load bagel up with healthy spinach, egg, parmesan cheese and sun-dried tomato!

Easy recipe: Serves 2
 1 100% whole wheat thin bagels (by Thomas brand)
 3 cups organic spinach
 2 tbsp sun-dried tomatoes
 2 tbsp grated parmesan cheese
 2 eggs (or egg whites)
 2 tsp cilantro, roughly cut or chopped
 1 tbsp minced garlic
 Salt to taste
 Olive or coconut oil spray

Preparation instructions
Spray a cooking pan with oil and set to medium-high heat
 Add garlic and cook for one minute or until light brown color
 Add spinach, sun-dried tomatoes and salt to garlic and stir fry until spinach is wilted
 Lightly toast bagel and place each slice inside facing up
 Divide the garlic, spinach and sun-dried tomatoes cooked mixture into 2 portions and scoop onto bagel slices  Sprinkle mixture with grated parmesan cheese
 To cook egg (or egg white), spray a cooking pan with oil and set to medium heat
 Cook egg to your desire doneness. Add salt if desire. Serve on top of bagel with mixture
 Sprinkle egg with cilantro and enjoy!

Calories: about 190 per serving (or 125 replacing egg with egg white, per serving) This recipe loaded up with so much goodness has less calories than a full regular bagel.

Chicken Veggie Flatbread Pizza

Do you sometimes crave for pizza yet do not want to load yourself up with unhealthy ingredients? Here is a healthy, yet mouth watering recipe that you’ll feel good eating!

Easy recipe: Serves 4
 4 pieces whole wheat flatbread, about 6” diameter (Trader Joe’s offers 100% whole wheat middle eastern flatbread)
 8 tbsp salsa (I bought freshly cut salsa from the store)
 6 tbsp grated parmesan cheese
 1 cup spinach
 2 medium sized tomatoes, sliced
 4 mini sweet peppers, core and seed removed, julienned (or 1 any color bell pepper)
 3/4 cooked chicken breast, shredded (Boil in water for 15 minutes, let cool and shredded. Or Trader Joe’s offers cooked frozen chicken breast that taste great)
 4 tbsp fat free feta cheese (optional)
 Olive or coconut oil spray

Cooking instructions
Preheat oven to 400°F
 Place flatbread pieces on a baking tray. Spread a layer of salsa on flatbread
 Add 1 1/2 tbsp parmesan cheese on top of salsa of each flatbread
 Spread 1/4 cup of spinach onto each flatbread and top with tomato slices and sweet peppers
 Finally, add shredded chicken. You can add feta cheese prior to baking or after (I like mine after)
 Spray a light layer of oil on pizza and bake in oven for 15 minutes

Calories: about 250 calories per serving

With the hot summer here, I was craving a refreshing kiwi smoothie. To make a cold smoothie, use cold water and frozen fruit. For example, frozen, chopped banana or grapes.

Easy recipe: Serves 2
1 cup water
 2 cups organic spinach
 1 kiwi
 1 cup grapes
 1 large banana
 Blend

 1 egg (or substitute with 2 egg whites)
 2 egg whites
 2 cups organic spinach
 1 small tomato, diced
 6 white mushrooms, sliced
 1/2 Italian squash, grated (or zucchini if you prefer)
 2 tbsp fat free crumbled feta cheese, optional (or your favorite cheese)
 2 tbsp salsa, optional (or pico de gallo)
 1 tsp garlic, minced
 1 tbsp onion, diced
 Salt to taste
 Olive or Coconut oil spray

Cooking directions
 Spray cooking oil in a cooking pan over medium-high and add garlic. Cook garlic stirring for about 1 minute or until garlic turns light brown, be careful not to burn or scorch the garlic
 Add mushrooms and stir fry for about 3 minutes. Add tomato to mushrooms and stir fry for 2 minutes. Then add spinach, squash and salt to the mixture and stir fry until spinach begin to wilt. Remove from heat and set aside
 Spray cooking oil in a small skillet (about 6 inches diameter base) over medium-high heat. Add onion and stir fry for about two minutes
 Turn heat to low and spread the onion across the skillet. Whisk eggs and egg whites together in a bowl and then pour into the skillet
 When eggs are half way set, add in the vegetable mixtures. Let the eggs fully set. Remove from heat and top with feta cheese
Top with salsa if desired and serve

Calories: about 120 per serving

Power Egg Taco Breakfast

I love the taste of eggs for breakfast. Eggs contain Vitamin A, D, B, folic acid, potassium, biotin, protein and help curb your appetite!

Easy recipe: Serves 4
 8 egg whites, whisked
 4 strips turkey bacon, cooked according to instructions, diced
 4 medium multigrain tortilla, about 6 inches diameter (skip this if you prefer)
 1 red bell pepper, core and seeds removed, diced
 6 cups organic spinach (prewashed and cut from a bag)
 1 avocado, sliced
 12 white mushrooms, sliced
 1/2 tbsp garlic, minced
 4 to 6 tbsp salsa
 Olive or coconut oil spray
 Salt and pepper to taste

Cooking instructions
 Spray cooking oil into a cooking pan over medium-high heat. Add garlic and cook for about 1 minute or more until garlic turns light brown and fragrant
 Add bell pepper and cook for another minute before adding mushrooms. Cook mushrooms until tender, about 4 to 5 minutes
 Add spinach and cook until spinach begins to wilt. Add egg whites and stir fry until eggs are cooked. By then, spinach will have completely wilted
 Turn off heat and stir turkey bacon into mixture
Scoop mixture onto a warm tortilla (heated according to instructions) and top with avocado and salsa. Fold tortilla in half
