Easy Healthy Ground Turkey Chili

With the cooler weather, wouldn’t you like to warm up with a bowl of steaming, ground turkey chili? Our ground turkey chili recipe is so easy to make that you can feed your whole family without the hassle of complicated cooking. Eat it as is or serve over rice or pasta.

Easy recipe: Serves 4
 12 oz ground turkey
 1 can kidney beans, drained
 1 onion, diced
 2 jalapenos, core and seed removed, diced (or can be replaced with 1/2 tbsp chili powder)
 1 1/2 cups of grape tomatoes (or replaced with stewed tomatoes from can)
 1 tsp red chili flakes (optional)
 1 bell pepper, core and seed removed, diced (any color)
 2 tbsp cilantro, roughly chopped (half for cooking and half for topping)
 1 cup fat free chicken broth 
 1/3 cup of fat free feta cheese for topping (or replace with you favorite cheese)
 Salt to taste
 Olive or coconut oil spray

Cooking instructions
 Spray cooking oil in a sauce pan and set to medium-high heat. Add onion, bell pepper and jalapeno and cooking until tender
 Add turkey, kidney bean, tomatoes, red chili flakes, 1/2 amount of cilantro and chicken broth. Bring mixture to boil and then reduce heat to simmer for 25 minutes covered
 Add salt to taste when you know that the turkey is already cooked. Add black pepper if desired
Once the simmering is done, scoop chili into a bowl and top with feta cheese and cilantro.

Sweet Peppers Turkey Snack

This low calories super snack of stuffed mini sweet peppers turkey and cheese packs a big bang of flavor. Perfect for snacking! This delicious sweet peppers with turkey and feta cheese recipe is a Fab and fun munchie party food too! Look for the multi color mini sweet peppers if you prefer to brighten up this snack. Try our easy to make sweet peppers turkey and cheese snack!

Easy recipe: Serves 4
 12 mini sweet peppers, cut length wise into half, core and seeds removed
 8 oz ground turkey
 4 tbsp cilantro, roughly chopped
 6 tbsp fat free feta cheese
 Olive or coconut oil spray
 Pinch of salt (optional)

Cooking instruction
 Preheat oven to 400°F
 Place mini sweet peppers on a baking tray and spray oil on both sides of sweet peppers
 Mix ground turkey with chopped cilantro and pinch of salt if desired. Spoon a small amount of mixture onto sweet peppers
 Bake stuffed sweet peppers for 15 to 20 minutes, or until ground turkey is cooked (I like mine at 15 minutes, so that the sweet peppers is half tender and half crunchy)
 Top with feta cheese and serve

Calories: 125 per serving

Turkey Bacon Stuffed Cheese Jalapenos

This mouth watering turkey bacon stuffed cheese and sun dried tomatoes jalapenos snack tastes Fablicious! If you love the taste of spicy food either as a snack or meal, this turkey bacon stuffed cheese jalapenos is a great recipe to make. All ingredients can be easily found in grocery stores. Beside the high flavor taste, this visually appealing turkey bacon cheese jalapenos would be great serving at party too!

Easy recipe: Serves 4
 8 large jalapenos, halves lengthwise, core and seeds removed
 8 to 10 tbsp fat free crumbled feta cheese, based on the size of your jalapenos
 4 tbsp sun dried tomatoes, chopped
 4 strips of turkey bacon, halves lengthwise, cooked according to package instructions
 Olive or coconut oil spray
 Salt to taste (optional)

Cooking instructions
Preheat oven to 375°F
 Place jalapenos in a baking tray and spray oil on both sides of jalapenos. Then turn the jalapenos cut side up for stuffing
 In a bowl, mix the fat free crumbled feta cheese with sun dried tomatoes. Divide the mixture into 16 portions and stuffed jalapenos with mixture
 Wrap each stuffed jalapeno with a strip of bacon. Tucked both ends towards the base of jalapeno or secure with toothpick
 Bake in oven for 20 to 25 minutes, based on how tender you want your jalapenos. Add more time if you prefer jalapenos to be very tender. I like mine a little tender and a little crunchy

Calories: about 85 per serving

Easy Recipe: Serves 2
 1 egg (or substitute with 2 egg whites)
 2 egg whites
 2 cups organic spinach
 1 small tomato, diced
 6 white mushrooms, sliced
 1/2 Italian squash, grated (or zucchini if you prefer)
 2 tbsp fat free crumbled feta cheese, optional (or your favorite cheese)
 2 tbsp salsa, optional (or pico de gallo)
 1 tsp garlic, minced
 1 tbsp onion, diced
 Salt to taste
 Olive or Coconut oil spray

Cooking directions
 Spray cooking oil in a cooking pan over medium-high and add garlic. Cook garlic stirring for about 1 minute or until garlic turns light brown, be careful not to burn or scorch the garlic
 Add mushrooms and stir fry for about 3 minutes. Add tomato to mushrooms and stir fry for 2 minutes. Then add spinach, squash and salt to the mixture and stir fry until spinach begin to wilt. Remove from heat and set aside
 Spray cooking oil in a small skillet (about 6 inches diameter base) over medium-high heat. Add onion and stir fry for about two minutes
 Turn heat to low and spread the onion across the skillet. Whisk eggs and egg whites together in a bowl and then pour into the skillet
 When eggs are half way set, add in the vegetable mixtures. Let the eggs fully set. Remove from heat and top with feta cheese
Top with salsa if desired and serve

Calories: about 120 per serving

Mini Pita Chicken Avocado Sandwich

I’m having so much fun using the whole wheat pita pockets and grilled chicken breast that I bought from Trader for various recipes. Here is recipe number 3. See last 2 days for recipes 1 and 2. These mini pita chicken avocado sandwiches are packed with high flavor and yet low in calories!
Easy recipe: Serves 4
 8 mini whole-wheat pita pockets, cut into half like a hamburger bun
 1/3 cup grilled chicken breast
 1 avocado, sliced into 16 pieces
 1 large tomato, sliced into 8 pieces
 1 1/2 tbsp non fat feta cheese
 6 to 8 tbsp pico de gallo
Preparation directions
 Place one slice of tomato on one side of cut pita pocket
 Add 2 slices of avocado and a small amount of grilled chicken breast on top of tomato
 Top with small amounts of feta cheese and pico de gallo if desired
 Finish off by covering with the other half of the pita pocket
Calories: about 190 per serving
